Producer Information

Domaines Ott* was founded in 1912 by Marcel Ott, an agricultural engineer from Alsace who dreamed of establishing a great wine estate near the Mediterranean. Today, the wineries are owned and managed by Champagne Louis Roederer and produce some of the world’s most prestigious wines, but particularly rosé wines, made at distinctively different estates in Bandol and Côtes de Provence appellations. Regarded as the “gold standard of rosé” by The Wall Street Journal, in 2016 Domaines Ott* has released a new cuvée, By. Ott.

Vineyards

This very ancient land is characterised by a combination of schists and clays, and by an absence of limestone. Produced from vineyards neighbouring their famous Grand Crus, By. Ott is a blend from the Clos Mireille and Château de Selle Estates. Clos Mireille´s proximity to the sea and microclimate offer freshness while Château de Selle, located on limestone hillsides, gives plenty of fruit and texture to the wine.

Winemaking

Made in Château de Selle’s completely new cellar, part of the winery is exclusively dedicated to making By. Ott. The grapes are hand picked, followed by strict and selective sorting on tables and an extremely delicate pressing process of whole bunches with a super short maceration to produce the beautiful light colour. Slow fermentation takes place in thermo-regulated vats.

Vintage Information

2018 was a challenging vintage due to frosts, hail, summer storms and lack of wind. The viticultural team at Domaines Ott* had to remain vigilant at all times in order to deal with these complications efficiently and ensure that the growing cycle was able to continue in the right conditions. On tasting the fruit, although there were less sugars than 2017, there was perfect balance. The team was extremely proud of the excellent yields across all of the vineyards. Vinification gave rise to a fruity, ethereal and perfectly balanced vintage.

Tasting Note

Luminous peach pink in colour with a succulent nose of yellow fruits and hints of pomegranate, pear and vanilla. Tangerine aromas and a touch of menthol add a burst of freshness.

The palate is full of citrus notes with a long, fresh finish.

Glistening onion skin. Aromas of white peach, strawberry and succulent herbs, along with a floral nuance that builds in the glass. Silky and round in the mouth, offering supple pit fruit and red berry flavors and a touch of bitter orange pith. A long, smooth finish echoes the floral and peach notes.
