Fruit is from the Prosecco Treviso DOC from estate vineyards in Treviso. The blend is composed of 85% Glera and 15% Pinot Bianco, planted on silty clay soils. This soil type supports both structure and freshness, giving the wine its clean fruit profile and balanced palate. The estate-grown fruit provides control over vineyard management and grape selection, helping to deliver a refined Prosecco style with aromatic clarity and good texture.
Vinification
Fermentation begins with cryomaceration at 5C, helping to preserve aromatic purity and freshness. The second fermentation takes place using the Charmat Method, the traditional Italian approach for producing Prosecco. The wine is aged for four months on selected yeasts, followed by eight months in autoclave at controlled temperature. This extended time supports texture, finesse and aromatic complexity while maintaining the dry, precise style expected of a Dosaggio Zero sparkling wine.
Tasting Note
The nose is intense and layered, with small white flowers and flint notes. The palate is dry, precise and savoury, with a clean mineral edge and a structured sparkling texture. Light to medium-bodied, it combines freshness with depth, showing a refined, zero-dosage profile that is both crisp and gastronomic. The finish is dry, sapid and persistent, with floral and mineral detail.
