Delas Freres
Delas Frères is a historic Rhône Valley wine house, founded in 1835 and known for, Marsanne, Roussanne, Viognier, Syrah and Grenache from the Northern and Southern Rhône. Based in Tain-l’Hermitage and part of the Roederer Collection, Delas produces wines from leading appellations including Hermitage, Crozes-Hermitage, Côte-Rôtie, Condrieu, Saint-Joseph, Châteauneuf-du-Pape and Côtes du Rhône. Chante Perdrix is a 100% Syrah from Cornas, an appellation located entirely within the commune of Cornas on the right bank of the Rhone. The vineyards are planted on very sunny south and south-east-facing slopes. Soils are varied, with alluvial deposits on steep shale slopes supported by dry stone walls. This blend comes from several south-facing plots and represents Delas Freres’ interpretation of Cornas, a historic appellation known since the 10th century for structured, age-worthy Syrah.
Vinification
The grapes are hand-picked plot by plot at optimum maturity. Vinification takes place in traditional open-topped concrete tanks after three days of cool pre-fermentation skin contact. Fermentation continues at controlled temperatures of 28-30C, with daily cap pushing down and pumping over for around ten days. Total vatting can last up to 20 days. The wine is matured for 12 to 14 months in oak barrels, with regular racking to provide oxygen for optimum tannin development.
Tasting Note
Chante Perdrix is intense garnet red in colour. In youth, the nose shows strong blackcurrant aromas, which develop with time towards pepper and liquorice. The palate is structured and firmly defined, with dark fruit, spice and the characteristic power of Cornas. Full-bodied and serious, it has tannic depth and a clear sense of terroir. The finish is long, savoury and persistent, with strong ageing potential.
Food Pairing
Pair with mixed grills, wild mushrooms, game, spicy sauces, roast beef, lamb shoulder, venison or rich stews. Cellar for at least three years and decant older bottles.
