Delas Viognier is a 100% Viognier from the Pays d?Oc, made from grapes grown on the slopes of the Pont du Gard. The vineyards are planted on limestone-clay soils formed during the Villafranchian stage, giving freshness, texture and aromatic definition. This southern French Viognier is designed to express the variety?s ripe stone-fruit and exotic-fruit character while retaining balance and delicacy.
Vinification
The grapes are generally harvested at night to benefit from cooler temperatures at vatting. After destemming, they are transferred to tanks for low-temperature maceration and skin contact. Once pressed and after settling of the grape solids, alcoholic fermentation is started with selected yeasts. Malolactic fermentation is avoided to preserve freshness, balance and delicacy. The wine is held in stainless steel tanks until bottling, following light fining and filtration to ensure stability.
Tasting Note
Delas Viognier has an intense, bright colour with a golden hue. The nose shows classic Viognier aromas of apricot, peach, exotic fruit and preserved citrus. The palate is smooth and fresh, with ripe fruit, rounded texture and balanced freshness. Medium-bodied and aromatic, it combines southern richness with a clean, precise profile. The finish is fresh and gently rounded, with a lingering dried-fruit note.
Food Pairing
Pair with cold cuts, steamed fish with lemon butter sauce, asparagus, artichoke, roast chicken, scallops, lightly spiced dishes, soft cheeses or vegetable-led starters.
