Chateau de Pez
Château de Pez is a historic Saint-Estèphe estate in Bordeaux, France, and one of the oldest vineyards in the appellation. Located on the Bordeaux Left Bank in the northern Haut-Médoc, the estate is known for structured red Bordeaux wine from Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. Owned by Champagne Louis Roederer since 1995, Château de Pez combines deep Saint-Estèphe roots with major vineyard restructuring, parcel-by-parcel vinification and modern cellar investment. Château de Pez offers a strong Saint-Estèphe proposition within the Roederer Collection, with depth, structure and approachability.

Second Pez 2021 comes from the 42-hectare Chateau de Pez estate in Saint-Estephe, with 38 hectares in production. The vineyard is planted on clay, limestone and gravel soils, which help shape the wine’s freshness, structure and mineral definition. Planting density is 8,000 vines per hectare and the average vine age is 25 years. The estate is managed under sustainable viticulture, with biodynamic practices on three hectares, and holds HVE Level 3 certification.
Vinification
Second Pez 2021 was vinified by vineyard plot in wooden vats and thermoregulated conical stainless steel vats. The wine was aged for 12 months, with 50% matured in oak barrels using a long, medium toast and 50% kept in vats. Egg white fining was carried out before bottling. This balanced ageing approach supports fruit clarity, freshness and approachable structure, while retaining the Saint-Estephe character of the estate.
2021
The 2021 vintage followed a mild, wet winter, with early budbreak at the end of March. April and May were dry and cool, slowing vegetative development. June was milder and brought flowering, but also record rainfall. The thermal inertia of Saint-Estephe?s clay soils helped the Pez vineyard develop gradually, reducing exposure to mildew pressure. A cool, humid summer led to slow veraison in August. Harvest began on 23 September and finished on 7 October, with healthy fruit despite some rain.
Tasting Note
The nose shows slightly minty red fruit with floral overtones. The palate is soft and fresh, with Morello cherry aromas and a clear, lifted profile. Medium-bodied, it combines approachable fruit with fine, chiselled tannins and a restrained structure. The texture is smooth and balanced, giving an elegant expression of Second Pez in a cooler vintage. The finish is medium in length, fresh and precise.
Food Pairing
Pair with roast chicken, pork tenderloin, grilled lamb, charcuterie, mushroom tart, lentil stew, tomato-based pasta, semi-hard cheeses or lighter meat dishes.
