Domaines Ott* was founded in 1912 by Marcel Ott, an agricultural engineer from Alsace who dreamed of establishing a great wine estate near the Mediterranean. Today, the wineries are owned and managed by Champagne Louis Roederer and produce some of the world’s most prestigious wines, but particularly rosé wines, made at distinctively different estates in Bandol and Côtes de Provence appellations. Regarded as the “gold standard of rosé” by The Wall Street Journal, in 2016 Domaines Ott* has released a new cuvée, By. Ott.

Winemaking

Made in Château de Selle’s completely new cellar, part of the winery is exclusively dedicated to making By. Ott. The grapes are hand picked, followed by strict and selective sorting on tables and an extremely delicate pressing process of whole bunches with a super short maceration to produce the beautiful light colour. Slow fermentation takes place in thermo-regulated vats.

Vintage Information

The 2023 harvest took place in three phases. During the dormant season, between October and March, there was not enough water to replenish the vines.
The arrival of heavy rains in May and June was a gift from nature as the vineyards were flowering. July brought a sharp rise in temperatures, before a brief period of cool weather in early August. This brief respite was then followed by an unprecedented heatwave for this time of year.
On August 16th, the teams were ready and waiting to start harvesting in the vineyards of Château de Selle and Clos Mireille. The harvest had to
be carried out quickly and well to preserve the freshness of the grapes.
The 2023 harvest was completed on September 28th at Château Romassan

Tasting Note

A delicate peach-coloured robe, shining and radiant.
The nose, highly expressive with notes of nectarine and rose, evolves towards pomegranate with a hint of fresh almond.
Full-bodied, the palate balances between luscious aromas of yellow fruits and the tang of grapefruit, leading to a lively finish carried by citrus zest.
The wine offers a pleasant length
