The Yorkshire Post Recommends By.Ott

The Yorkshire Post’s Christine Austin has included Domaines Ott’s newest release, By.Ott in this week’s “Just Tasted” column.

Christine described Domaines Ott as having ‘set the standard for Provence Rosé for decades’, and By.Ott is no exception.

By.Ott is a blend of Grenache, Cinsault and Syrah produced from vineyards neighbouring Domaines Ott’s famous Grand Crus: Clos Mireille and Château de Selle.

Made in Château de Selle’s completely new cellar, part of the winery is exclusively dedicated to making By.Ott. The grapes are handpicked, followed by strict and selective sorting on tables and an extremely delicate pressing process of whole bunches with a super short maceration to produce the wine’s beautiful light colour.

Austin describes the wine as being a ‘delicate, pale salmon colour [with]…far more flavour than the colour suggests. Notes of white peach, apricot and passion fruit blend into crisp, citrus freshness’.
