Pascal Jolivet was founded in 1987 and is one of the most dynamic domaines in France’s Loire Valley. Based in Sancerre, the domaine now owns 70 hectares of vineyards spread across the appellations of Sancerre and Pouilly Fumé. The domaine supplements the estate holdings with additional fruit sourced from long-term contract growers some of the prime sites of the region including ‘Les Caillottes’, ‘Le Chêne Marchand’ and ‘Le Clos du Roy’. Pascal shares his philosophy with winemaker, Valentina Buoso: to work in harmony with nature to produce wines with purity of fruit, a linear character and minerality, allowing a natural expression of the vineyard to give the wines a sense of place.
A blend of grapes grown on limestone and clay mixed with flint on the vineyards in Chemery en Touraine.
After harvest, the grapes are gently pressed. The juice is then fermented in temperature-controlled stainless steel vats, using natural yeast. The wine is aged on fine lees for
5 months.
The 2021 vintage was a challenging one, with lower yields across the region. Sauvignon Blanc’s crop was smaller than then previous vintages but the fruit was of great quality. 2021 saw a return to a more typical Loire profile with fresh, crunchy fruit and delicate aromatic profile.
Attitude has a floral, elegant nose with precise notes of white
fruits. On the palate the wine is refreshingly dry and mineral.
A wine ideal as an aperitif, and to accompany oysters, chevice or white fish.
Serve at 10°C.
