Producer Information

Pascal Jolivet was founded in 1987 and is one of the most dynamic domaines in France’s Loire Valley. Based in Sancerre, the domaine now owns 70 hectares of vineyards spread across the appellations of Sancerre and Pouilly Fumé. The domaine supplements the estate holdings with additional fruit sourced from long-term contract growers some of the prime sites of the region including ‘Les Caillottes’, ‘Le Chêne Marchand’ and ‘Le Clos du Roy’. Pascal shares his philosophy with winemaker, Valentina Buoso: to work in harmony with nature to produce wines with purity of fruit, a linear character and minerality, allowing a natural expression of the vineyard to give the wines a sense of place.

Vineyards

A blend of grapes grown on limestone and clay-limestone.

Winemaking

The rose is crafted from grapes which are directly pressed. The short maceration window allows to keep the freshness and minerality of the Pinot Noirs. The vinification occurs with natural yeasts in temperature-controlled stainless steel vats. The is then lightly filtered and rested for 7 months before bottling.

Vintage Information

The 2021 vintage was a challenging one, with lower yields across the region. The crop was smaller than then previous vintages but the fruit was of great quality. 2021 saw a return to a more typical Loire profile with fresh, crunchy fruit and delicate aromatic profile.

Tasting Note

A rose with an expressive nose of ripe citrus, crunchy red fruit. Dry and mineral, on the palate it is perfectly balanced.

Food Pairing

Perfect to accompany warm goat cheese salads and grilled meats.
