Pascal Jolivet was founded in 1987 and is one of the most dynamic domaines in France’s Loire Valley. Based in Sancerre, the domaine now owns 120 hectares of vineyards spread across the appellations of Sancerre and Pouilly Fumé. Pascal shares his philosophy with winemaker, Valentina Buoso: to work in harmony with nature to produce wines with purity of fruit, a linear character and minerality, allowing a natural expression of the vineyard to give the wines a sense of place.
The Coteaux du Giennois region was granted AOP status in 1998 with 233 hectares planted. Edition is produced with grapes from Pascal Jolivet’s 20 hectares of vineyards in Saint Père in the South East of the region. The grapes are exclusively harvested from the centre of Saint-Père which is the only area of limestone, flint and chalky clay terroirs in the appellation.
After pressing, the juice is cold-settled, without the use of enzymes. The vinification starts spontaneously thanks to indigenous yeasts. The natural vinification reveal the expression of the terroir, and the fruit’s aromatic complexity.
The 2021 vintage was a challenging one, with lower yields across the region. Sauvignon Blanc’s crop was smaller than then previous vintages but the fruit was of great quality. 2021 saw a return to a more typical Loire profile with fresh, crunchy fruit and delicate aromatic profile.
Red apple on the nose with clove and vanilla baking spice, the palate reveals a creamy texture with fresh notes of quince, brioche, toasted walnuts, ginger and orange peel. A beautiful expression of Sauvignon Blanc with a hint of a
Burgundy profile, varietal freshness perfectly balances its body and powerful aromatic profile.
Ideal as an aperitif and as accompaniment to shellfish and shashimi.
